I’m almost certain there’s been a time when you didn’t want to cook for yourself and decided that eating out was a better option. What happens too often after eating out? You feel bloated and uncomfortably full and maybe even guilty for indulging and spending the money on something not so healthy. But what if you could cook a delicious and healthy meal in less than ten minutes and feel great about it? Would you rethink eating out? I say yes!

This meal is so incredibly easy to make and screams fresh and healthy. Although I love cooking, I know there are so many women out there that don’t enjoy it and shy away because it seems too complicated and time consuming. This dish will have you rethinking how you feel about cooking. Over the years I’ve learned that meal planning and cooking for me comes down to simple and fresh ingredients on my plate. Of course certain flavors and foods work together better than others, but at the end of the day it’s more important to put simple, delicious, and nutritious foods on your plate. Your body will be thanking you!


  • 1/3 cup couscous (dry)
  • 1 medium tomato
  • 2 basil leaves
  • 1 oz feta cheese (omit for Vegan alternative)
  • ¼ cup croutons
  • 1 teaspoon olive oil
  • 1 tablespoon sun-dried tomatoes


  1. Cook couscous according to package directions.
